NRDC has a Q&A page which name is "Global Warming 101".
(I think that "101" may be used alternatively to "lol",

What means is this words set?
Why did he use "were"?
If "Everything" was a subject of this words set (sentence?),
a verb of this subject must be singular.
And I think what is "too afraid to ask" must not exist in our world in the past and now.

Why did he want to say that?

In fact, if the writer of this words set, really wanted to write this "Be" verb as "were,"
we can not understand any meanings of this words with a direct linking between "Everything" and "were."
"Any words are omitted in this words set" suits this situation.

"Everything you wanted to know about our changing climate but all (anything) were too afraid to ask."
I recognize a omitting of a word "all", which must be treated as in the plural.
So he treated what we could not ask as in the plural and countable.
